Schokoladen Manufaktur Zotter

 

Josef Zotter, originally a chef, started making chocolate by hand in the early 1990s. In 1999 the “Schokoladen Manufaktur Zotter” was opened in Styria, near Graz, and specialised in the production of chocolate. Since then the enterprise has had an impressive development, and Josef Zotter is one of the few bean-to-bar chocolate manufacturers in Europe – that means they make their chocolate from the raw cacao beans to the final bars. In addition the ingredients used are organic and fair trade. The manufactory was remodelled in 2007 and is now a chocolate factory and also a chocolate theatre: visitors get insight into every step of the production process as well as countless opportunities to taste it all – from raw shredded cacao beans to the final, often fancy creations.

For the Edelweiss Collection a chocolate was selected that blends ginger and carrot with white chocolate. Both flavours harmonize well with the chocolate to form a one in a kind experience in your mouth. In order to fully experience the aroma, it is recommended to not chew, but melt the chocolate in your mouth.

Additionally Edelweiss Collection includes “balleros”, here “Physalis im weißen Kleid” (physalis in a white dress – a Peruvian cherry, coated in white chocolate and lemon sugar) which is a tasty combination of sweet and sour.

Zotter products are best enjoyed at room temperature.
